Cheese Sauce
This sauce is good with poultry.
 
1 Tbs   butter  
1/2 Tbs   flour  
1   salt  
  pepper  
pinch   of cayenne pepper  
1 cup   milk  
1   egg yolk  
1 Tbs   Parmesan cheese  
 
 
1 Melt the butter in a small saucepan and stir in the flour and seasonings to taste. Add the milk. Stir continuously until sauce thickens.
2 Remove pan from heat and stir in the egg yolk. Stir in the cheese.
 
Servings: 5
Yield: 1 1/4 cups
