Vinaigrette |

cider vinegar |

honey |

extra virgin olive oil |

For each serving, toss 1 oz of greens with 1/2 tbsp Vinaigrette on a plate. |

Scatter 1/4 oz of onions over greens. Arrange 2 oz apple slices in concentric circles. Top with shredded duck and 1/2 oz pecan halves. |

Cut dates into slivers and sprinkle atop salad. Drizzle with 1 1/2 tbsp Vinaigrette. |
Vinaigrette |

Mix vinegar and honey together. |

Slowly whisk in oil. Stir in dates, mint and salt and pepper. |

Let dressing stand for at least 2 hours before using. |
